Peanut Butter Chocolate Chip Cookies Recipe

Kayleigh here. Living in a two person household, I have found the value of single serving desserts to be ten times more than when I lived in a party apartment in college, or a house with a family of four. When a cake takes us 2-3 weeks to get through, it tends to be a bit dry by the last couple of slices. Piles of cookies and platters of brownies end up getting taken into work and given away, just so we don’t have to stick with the same sweets for what seems like forever. Sure, it’s a great way to introduce friends and coworkers to how good gluten free baking can be, but I have come to really enjoy adding to my stash of quick, simple, and small desserts that can be whipped up on the spur of the moment.

Of course, we have already posted a couple of our go-to recipes (Microwave Brownies and Christmas Cookies), and several of the other ones I rotate in and out have come from the minds of very creative individuals, such as flourless chocolate cakes, strawberries and cream on sweet biscuits, and decadent pots de crème when I have a few hours notice. But what we have for you today goes perfectly with a glass of milk, a comfy chair, and your favorite TV program- Peanut Butter Chocolate Chip Cookies.

These were always a favorite of mine growing up- my mother would whip up a few dozen and pack them into our suitcases on vacations, so they became a real special treat in my memories. But what sets this gluten free recipe apart is twofold- this only makes a couple cookies (or one giant one), and it has NO EGGS. So if you didn’t want to heat up the house by turning on the oven, you could just leave it in the bowl and dig in with a spoon!

Peanut Butter Chocolate Chip Cookies
(pics to come!)

Ingredients:

1 TB Peanut Butter (or your favorite nut butter)
1 TB Applesauce
1-2 TB Brown Sugar (depending on how sweet you like your cookies)
1/8 Cup Millet Flour
1/8 Cup Brown Rice Flour
Pinch of Baking Powder
Small Handful of Chocolate Chips

Directions:

1)      Preheat oven to 450 degrees F. In a bowl, combine all ingredients but the chocolate chips. The consistency should be like a thick cake batter- soft, but will still hold a shape on the flat cookie tray. If not, add more applesauce to thin, or brown rice flour to thicken.
2)      Spoon the dough onto a baking sheet (either two regular cookies or one giant one). Keep in mind that these will not really change shape while baking, so wet a spoon and form them into the right shape. If the appearance is really important, smooth out the top of the cookie with the spoo1n, too.
3)      Bake for 8 minutes for the giant cookie, 6 minutes for the smaller cookies. Let cool for a few minutes, then enjoy!

Jason here. I’ve always enjoyed meals with little preparation, so these quick treats fit me perfectly. When you suddenly find yourself wanting a peanut butter chocolate chip cookie, you don’t want to wait 2 hours for them cook. This recipe allows me to enjoy the cookie, while I still have that craving.
The cookies themselves are great. When they first come out of the oven, they still have a softer gooier texture to them. Throw it in the fridge or wait to the next day, and you have a really crunchy cookie.
Because they are so quick, they are easy to customize the taste of. Want a more chocolate cookie, just add more chocolate chips. Want a more peanut butter taste, just add more peanut butter. This is great for us because Kayleigh and I tend to be on opposite ends of the spectrum.
Who doesn’t love the smell of fresh baked cookies. With this recipe you enjoy that smell, plus fresh out of the oven cookies whenever you want.

Wilde Rover Review

Jason here. We just went to what may be my new favorite restaurant, the Wilde Rover (Wild Rover) in Kirkland. Just take a look at all of the delicious, gluten free items labeled right there on their menu. What is it that I spy right there, just under Starts & Pub Favourites? Why I think that is Crispy Jumpy Wings GF!

That’s right, we have found another place with gluten free wings and they are some of the best I have ever had. Ordering wings is always a game of chance. There are just so many different ways to prepare and serve wings, with a variety of flavors. What they brought out to my table is exactly what I love in wings, a crispy outside, succulent juicy chicken inside, and all coated in a heaping amount of buffalo sauce. The sauce itself was not the standard franks hot sauce and butter, although definitely similar. For me it was the perfect taste combined with heat. I tend not to like my wings overly spicy, as it reaches a point where the spice actually drowns out any of the flavor. Wilde Rover’s flavor was distinctly buffalo with a nice blend of spices. If you’re into it, they also have Jameson Whiskey BBQ sauce (which are also delicious), and Roasted Cherry & Habanero BBQ wings. Just to round off the wings, they also come with both carrots and celery served with bleu cheese.

We also happened to go at the right time to catch live music. There was a small cover charge at the door, but the music was good and atmosphere was totally worth it. The place definitely filled up, but we found a nice table around the back of the bar where we were still enjoying the music, but could hear each other talk. Turns out they have events almost nightly, so check out the Wilde Rover’s Calendar to find something you might be interested in. Even without an event going on the atmosphere is great. There is a variety of bar games in the back such as pool.

Kayleigh here. If this says anything about the quality of this place, we have already been here twice before making this post live. It was so good, we knew it would be a tragedy not to introduce all our friends to the delicious pub grub, so we went back within weeks of our first visit. I seriously recommend timing it during a live performance for the entertainment, or going during happy hour for cheap eats all around. Plus, the fantastic selection of whiskeys on top of the standard drink list make this a unique opportunity to try some hard-to-find pours without having to pay out the nose.

In summary, the Wilde Rover Irish Pub and Restaurant in Kirkland is one of the best places I have been to in a while. The food is excellent, they are extremely gluten intolerant friendly, have large varied menu, and best of all they have some of the best wings I’ve had.

Local 360 Review

Jason here. Recently we were downtown in Seattle, showing my good friend Lee around. Well, downtown has no shortage of places to eat, but this time another friend convinced us to check out the Local 360.

The Local 360 Café and Bar caters to being local and eco-friendly, having all of its food locally sourced within 360 miles. Additionally, they even had a chalk board in the back which shows which local farmers they have ordered from recently (The one I remember was a poultry farm called The Mad Hatcher!).

We knew ahead of time that the Local 360 had gluten free labels on their main menu, which you can view online. I was excited to eat here, as their dinner menu had a few options I was interested in trying. However, we ended up getting there a bit early and only had the brunch menu. Lucky for our non-gluten free guests, their special is fried chicken and waffles, which I have been told was quite good.

For brunch gluten free items, there wasn’t much to choose from, consisting of mostly breakfast staple foods like eggs, sausage, bacon, fries, etc. I ordered the Farmers Breakfast, which came with eggs, bacon, and home fries. If you are gluten intolerant, make sure you really emphasize that you need the item gluten free as many items require substitutions. In my case, removing the biscuit which usually comes with the meal.

The meal was pretty standard as far as breakfasts go. The bacon cooked medium, so it wasn’t too crunchy or too chewy. The eggs I got over easy, and the home fries were potatoes. They all tasted fine, but the eggs tasted like eggs, the bacon like bacon, and the potatoes like potatoes. Nothing really stood out to me.

Kayleigh here. As I’m not particularly a meat and potatoes type of person, the gluten free brunch options were not hugely appealing to me, so I ordered a gluten-containing meal. Staying relevant to the blog here, the atmosphere was uniquely homey, with a strong farm-to-table vibe in the wooden furniture and water jars at every table. It was rather nice to step out of the hustle and bustle of the Pike Place Market area, considering they are only a few blocks away from the main marketplace, but due to the proximity and the smaller size of the restaurant, I would bet it gets pretty busy during the dinner hour. Try to come early!

All in all, the restaurant was okay. To be fair, locally sourced food doesn’t really mean much to me and I should have realized it was their brunch menu at the time we went. Next we go, I will be sure to stop by during dinner, when they have a more varied gluten free menu.
